How to read the Illinois Food Establishment Inspection Report
Beginning January 1, 2019, Illinois Department of Public Health implemented the 2017 FDA Food Code and the FDA’s uniform inspection report. The new inspection report promotes a risk-based inspection in which the Foodborne Illness Risk Factors and Public Health Interventions are the primary focus of the inspection.
Each violation identified on the inspection report will be categorized and marked as one of the following categories:

Priority Item (P) - Item that contributes directly to the elimination, prevention, or reduction of hazards associated with foodborne illness or injury to an acceptable level. These violations can be typically thought of as “critical” violations.

Priority Foundation Item (Pf) - Item whose application supports, facilitates or enables one or more Priority Items. These violations can be typically thought of as “major” violations.

Core Item (C) - Item that usually relates to general sanitation, operational controls, sanitation standard operating procedures, facilities or structures, equipment design, or general maintenance. These violations can be typically thought of as “minor” violations.
